Strawberry Feta Spinach Salad
The weather is starting to warm up here finally and with warm weather comes all those delicious summer recipes I’ve been missing. I saw the most beautiful red strawberries in the grocery store today and bought two packs! The first recipe that popped into my mind is my favourite summer salad… a Strawberry Feta Spinach Salad.
The first time I enjoyed a Strawberry Feta Spinach Salad was on a hot, sunny patio in Toronto. The restaurant dressed it with a sweeter honey dijon dressing which is nice, but tends to a bit too sweet for me. When I make it at home I make my own vinaigrette using just a touch of honey dijon, and adding some garlic to kick it up a bit.
Delicious and packed with nutrients
This Strawberry Feta Spinach Salad checks off so many boxes when it comes to being healthy. Spinach is full of like vitamins A, B2 and C. It’s also an excellent source of Iron which is necessary for transporting oxygen throughout your body. When paired up with even more vitamin C like in ripe antioxidant rich strawberries the absorption rate sky rockets. The healthy fats from the olive oil and walnuts both fight inflammation and keep you feeling full.

Notes
Music makes everything better – even salad
So obvious… I know! But I couldn’t help it. I love The Beatles and I loved this salad… it’s the perfect pair. Actually a nice Rosé would make it the perfect trio. Do me a favour…make this salad, pour yourself a cool glass of rosé and savour while listening to Strawberry Fields. Let me know how perfect it was in the comments below.
